Title: Grandma Stewart's Cake
Categories: Cake Dessert
Yield: 6 Servings

2 Eggs
1cSugar
1cFlour
1pnSalt
1tsBaking powder; rounded
1tsVanilla
1/2cBoiling water

Beat eggs until light. Add the sugar and mix well. Measure a cup of flour into the sifter, add the salt and baking powder, and sift into the egg mixture. Mix well.

Stir in the vanilla and the boiling water; mix well and pour into prepared 8 x 8 square pan. Bake at 350 F for 20 minutes, or until a toothpick inserted into the center comes out clean.

This recipe may be doubled and baked in two 8 x 8 pans for a two-layer cake.

This cake comes out rather dense and not too sweet. It's excellent with a cream cheese or buttercreme frosting.

An old family recipe passed down from my great-grandmother, Hazel Stewart, MMed by Dave Sacerdote and posted in the Fido COOKING Echo in Jan. 1996.
